#1 Her famous temper comes from her Sun/Jupiter in conjunction in Sag. square to Uranus in Pisces. Any sudden emotional outburst is fueled in strength by Pluto in Cancer which trines Uranus.  
#2 The two older lovers come from her Venus in Capricorn in the first sextile to the Mars/ Saturn conjunction in the 11th.  
#3 Similarly, her voice noted for its power and effect, come from the relationship between Venus, Mars and Saturn. Mars/Saturn tightly conjunct in Libra, ruled by Venus give her a powerful, energetic drive to express her art in a structured way. The square from Venus in Saturn also lends discipline and mastery (practiced endlessly) of her artistic form. Neptune in Leo contributes dramatic artistic/musical performance - trine to Mercury in Sag in the first - which she expresses easily and necessarily in order to feel she is conveying her complete self to the world. Neptune in Leo also forms a wide, separating sextile with Mars and Saturn in Libra in the 11th.  
#4 A quick look shows that her MC in Virgo (health, nutrition, diet) by solar arc direction conjuncts Saturn (restriction, discipline) at approximately 30 years 6 months or June 1954. With Mars conjunct to Saturn in Libra natally she had a lot of energy and initiative to take the weight off and her vanity (Libra ruled by Venus) was also a likely contributing motivator.

Her temperament comes from the fact that her Sun, Asc, and Jupiter (Sagittarius' ruler) are all in Sagittarius and all in conjunction - too much fire for her to subdue. In addition, her Mars was in Libra adds a bit of a 'fittish' characteristic to her temper. Her attraction to older men (and wealthy ones too) is shown in her Venus in Capricorn. Further, the fact that Gemini rules her 7th house may suggest she liked to be 'taken care of' and preferred to be the child in a relationship. She may have wanted a daddy as well as a lover. Her singing abilities may have begun with Mars in Libra (very musical people - John Lennon and Elvis Presley are good examples) which sextiles Venus (the musical planet). But, it was further nourished in her progressed chart. Although I did not have the time to progress it, clearly the logical progressions show: Taurus becoming the ruler of the fifth house, MC in Libra, and her Sun and Asc move into Capricorn (another planet associated with musical abilities).  
Regarding her weight: I did not have time to progress the chart, however, her Moon in Virgo in her natal chart would hardly allow her to continue through life at 200 lbs. It was just a matter of time (and help from planetary positions - I'm sure) before she let her vegetable eating moon take over through sheer will power and probably starvation - it's not beneath Virgo moons to starve themselves. Good for her!

According to French astrologer Andre Barbault, when Callas ordered her horoscope at "Astroflash" in Paris, she wrote that she was born at 6 AM.

After reading the other posted comments, I looked at some other well-known opera singers' charts. Kiri Te Kanawa has Sun at 15 Pisces, and Mars/Saturn conjunct at 19 Gemini. This Mars/Saturn conjunction seems relatively common among female divas. Venus at 16 Aquarius trines this conjunction.  
In Marilyn Horne's chart, there is a Mars/Saturn conjunction at 15-16 Aquarius, and Venus conjoins this conjunction from 23 Aquarius. Horne also has 4 Cancer, a musical water sign, rising.  
Callas has the Mars/Saturn conjunction at 28 Libra with Venus in sextile from 0 Capricorn. It may be that the pent-up energy of the Mars/Saturn conjunction finds musical expression through Venus which is in aspect to the conjunction in all three charts.

The temper is indicated by many measurements. The Sun, Mercury, and Jupiter all in Sag. (Jupiter in its own sign and unaspected in the chart adding to the power) suggests arch opinionation. Mars equals the midpoint of Sun and Moon, making drive and assertiveness central to the personality. This Mars is conjunct Saturn, indicating the harsh combination of hot and cold, stop and go, that can produce endless smoldering from which anger can explode. Finally, the intense emotional tensions suggested by Moon opposed Uranus are funneled directly into the Sag. Mercury through the T-square, thus ready to explode through communication.

I consider the astrological referenda for Maria Callas' notorious temper to be the sesquare aspect from Mars-conjunction-Saturn at 28 Libra to Uranus at 13 Pisces. Mars-Uranus conflicts are frequently associated with over-reactions under stress, accident-proneness due to impatient self-willed drastic action taken to enforce one's own will, whilst transits of Uranus to adverse aspects of Mars bring bouts of bad temper or 'flying off the handle.'  
I consider that Maria was able to maintain her weight loss program because of her Mars-Saturn conjunction in Libra sextile to Venus in Capricorn. A conjunction of Mars and Saturn, particularly with Saturn exalted, indicates tremendous self-discipline and a readiness to undergo a Spartan regimen. Kiri Te Kanawa also has Mars conjunction Saturn, though in Gemini, but both are air sign placements and suggest an underlying ideal to be attained by exercising such self-control. In Libra the ideal would be connected with appearance, elegance, grace. Mars conjunction Saturn frequently implies being hard on oneself as well as on others.

1. temper....She has three planets rising in Sagittarius--Jupiter, the Sun and Mercury...all in square to Uranus in Pisces...righteous indignance is a quality not strange to Sagittarius, or to Uranus...Sagittarius as a sign of Fire, especially with two fiery influences in it, lets everything loose...no holds barring...when angry...and Uranus is very unpredictable when squared...on the 4th house cusp, she is likely to have had a very emotionally unstable home life as a child...very temperamental...the squares with Sagittarius, she knows no limits...if there were no squares with Sag, then she might have known some peace...but here Sag says that she must always be in motion, she may have gotten some kind of high from being the center of attention, thinking big, being a dreamer....living the high life..."no one will ever stop me!!!"....she MUST have HER WAY...or she will take the highway, literally....  
2. I think this is partially Sagittarius again...thinking big...living the high, expensive, cultural life...travel....but also we have Venus in Capricorn...and Pluto in the 8th...among other influences...Venus in Capricorn are the kind of women from whom you are lucky to get the time of day...she would not even think of marrying below her station...she marries strictly for convenience...material stability...also Venus is in a strong sextile with Mars and Saturn near the first point of Scorpio....these planets are extremely conjunct...Mars is the man in her life...she demands to be with a man who holds a very high position and has lots of responsibility and beaucoup de MONEY!!!!.....Her moon here is very lonely in Virgo and in a wide square with her Venus....apparently material security and status was more important to her than real attachment of love....she does not seem a very happy soul...I notice also little Pluto in the Eighth....again a very powerful man...eighth=sexual partner??...with command over life

Again I think this appeals to Venus in Capricorn...which could reflect her "pathologically ambitious mother" (remember the square to the Moon--unhappy child having to meet demands of parents).....anyway Venus holds some sway over the female voice which is quite distinct from that of males...the Capricorn influence, plus the sextile to Mars-Saturn shows that her voice was extremely disciplined....Mars says that she was very eager to try anything with it...  
4. Without looking, (at my ephemeris, that is)...she has Pluto in Cancer in the Eighth...a very powerful place for Pluto...any change that she put herself through would have been very cathartic and long-lasting....Pluto here is in cahoots with Uranus in Pisces...near the 4th...very sudden and fast change indeed...in 1954 Jupiter made a pass through Cancer and breezed over her Pluto...Uranus was also in Cancer in her 8th...Saturn had just made his periodic 29-year return and had entered Scorpio...Neptune was near the end of Libra on top of her conjunction (near the first point of Scorpio) there...Pluto was in Leo having passed her Neptune...upon close looking at these long transits...Pluto, 8th, Scorpio...all of these are about drastic and overall change that is irrevocable...the Saturn involvement means serious structural change...Mars indicates physical activity....as does the fire in her chart...no, I did not overlook the Grand Fire Trine in the chart...Mercury-Neptune-Chiron...she was exaggerated and extra...

Callas has many similar aspects that other famous opera singers have. She has a very wide trine between Venus in Capricorn and Neptune in Leo. Other Opera Stars with the Venus/Neptune aspects are Pavarotti, Domingo and Leontyne Price who doesn't have an aspect but does have Venus exalted in Pisces in the first house. Interesting to note that all of these singers also have Venus associated with the First House. The Venus is on the world axis giving her fame in venus matters, her voice.  
Taurus rules her sixth house of skills and service and that is ruled by Venus in Capricorn at that critical degree which is in mutual reception with Saturn in Libra. The saturn also tightly conjuncts Mars. This very much explains her hard work in the music business, all that Capricorn/Libra reception as well as the Saturn Mars conjunction sextile the Venus. This will also explain her relationships with older men who greatly influence her career. Reinforcing this is the ruler of her chart, Jupiter in Sag conjunct the Sun. She loves foreign men, and these relationships will be known to the world since this conjunction in right on the ascendant.  
I think the weight issues can be explained by Sag rising, which tends to have weight fluctuations and also the Moon in Virgo squaring that Venus in Capricorn which would indicate struggle with her appearance and radical changes  
The legendary temper could be explained by the tight Mars/Saturn conjunction in Libra but more likely the Uranus in Pisces squaring the Ascendant.

It is difficult to judge a chart with an uncertain birth time. Although the mother reports a dawn birth, the actual time could vary an hour or more from the actual time of sunrise (which was at 7:05:51 EST in New York City). At 6:15 a.m., or 40 minutes before sunrise, she would have a Scorpio ASC, which would be more consistent with her extreme and intense emotionality. The Ascendant then moves to Sagittarius until about 8:42 a.m. We should consider the possibility that Callas has a late Scorpio ASC since Scorpio is linked to depth of emotion and water signs are often prominent in musician's chart. If she were born around 6:15 a.m., her mother would have been cradling Callas in her arms as she looked out the hospital window to watch the sun rise.

For temper I would look to Mars and Pluto. Mars closely conjoins Saturn, an aspect often described as "accelerating with your foot on the brakes" or moving forward in a series of fits and starts. Mars is also sesquiquadrate Uranus, suggesting unpredictable fits of temper. Pluto, the planet of intense emotion, is quincunx the sun, suggesting difficulties with the regulation of passion.  
2. From whence the two rich older men as lovers?  
Without an accurate birth time, we don't know for certain the sign on the cusp of the 7th house of marriage. If she was born near dawn, she has either a Taurus or a Gemini 7th cusp. Venus shows her attractions. Lying in Capricorn, Venus suggests attraction to older men. Venus is also sextile the Mars/Saturn conjunction, again signifying an attraction to older (Saturn) and virile (Mars) men.  
3. She is famous for her voice, yet there is nothing in the second house or Taurus. So where is it?  
In a 6:15 a.m. chart she would have Scorpio rising and Venus conjunct the Placidus cusp of her 2nd house. Vocal musical ability would be shown by the aspects of Venus, Neptune, and Mercury. Mercury (verbal expression) is trine Neptune, a very favorable aspect for a vocalist. Venus (the fine arts) is sextile the Mars/Saturn conjunction. Here Mars rules the 12th house (music, poetry) and Saturn rules the 2nd house of income as well as the 3rd house of verbal expression. In addition, her Part of Fortune lies in the 3rd house. In a Scorpio rising chart, she would have the middle decan of Virgo on the MC. The Chaldeans gave Venus (music and the arts) rulership of the middle decan of Virgo.  
4. AstroDieting: how did she go from 200 pounds to 130 in 1954 - and keep it off?  
Here secondary progressions for 1954 help to answer this question. In 1954 her progressed Saturn was sextile natal Venus, giving her the discipline to watch her consumption of sweets and other fattening foods (Venus). Her progressed Moon was trine natal Pluto, indicating intense feeling and determination, which she could put to beneficial use. Her progressed Sun in 1954 was in the eleventh degree of Capricorn, a sign known for its discipline and persistent effort. Progressed Sun was also opposing both progressed and natal Pluto, which challenged her to review and revise her self-image as part of a process of major personal transformation.

Miss Callas is of the fire element - with both Venus and Mercury out of bounds by declination at birth. She also has a mutable t-square, with that out of bounds Mercury in the handle point - so , sing or yell was probably her motto! We all know the sign Sagittarius tends to go beyond normal expressions.  
Her Venus is at a critical cardinal degree at birth, in Capricorn, they tend to go for older types, people they can respect and look up to. It may also account for her interest in the arts. But, I would not rule out Uranus in Pisces (again part of the t-square), contributing to her need to express artistically.  
In 1954, eclipses made exact aspects to her Moon and Mars/Saturn conjunction - this drew her attention to change. Since they were in Cancer and Capricorn (her 2nd/8th polarity), there may have been some health concerns brought to her attention at that time. Her Progressed Mercury was also stationery retro at 28 degrees Capricorn - she knew how she really wanted to look all along!

Maria Callas was one of the greatest artists in history! I would say that she had late Scorpio rising - one look at those laser-beam eyes and her bone structure convinces me of that (we are dealing with a rough-hewn birth time.....so a Scorpio ascendant is entirely possible). Her life story is a Scorpionic saga of transformation, if ever there was one.  
She overcame a childhood filled with rejection - her mother preferred her beautiful sister Jackie. How ironic that she would later lose Aristotle Onassis to another beautiful woman named Jackie.  
Maria learned to work doggedly hard and develop her talents to overcome her early painful years. Her disposition was Scorpionic - very passionate, emotional, intensely focused, with a famous capacity for confrontation and control. A Scorpio ascendant combined with her Virgo Moon describes her extreme perfectionism, both with herself and others.  
The Scorpio ascendant and the first house Sun aspecting Pluto represent her amazing physical transformation. Even at 200 pounds she was a beautiful woman, but she wanted to look like Audrey Hepburn. She reduced her weight and changed her entire personality, and became La Callas. Some attribute that weight loss to the flaws that later appeared in her voice.  
She was a musical genius - able to learn parts very quickly. Uranus in Pisces square her Sun and Mercury in Sagittarius describe her brilliance, intractability, originality and the lightning speed with which she absorbed entire roles.  
She introduced the element of acting back into opera, which for the most part, had become a static art form in which people just stood on stage and sang. The theatricality of her fiery first house Sun was monumental - she revived the bel canto school of opera and brought to the stage many works that had long been forgotten and misunderstood.  
So capable was she of becoming deeply immersed in her roles that she literally became her part, applying herself with a Plutonian intensity that can be heard on her many magnificent recordings.  
Jupiter conjunct her ascendant describes her acting ability (a la Gauquelin) and larger-than-life personality. Sagittarius is one of the musical signs found in the charts of many great musicians: Mozart had a Saj Moon exactly conjunct Pluto, Beethoven a Saj Sun and possibly Saj Moon, Puccini had Sun and Venus in Saj, Beverly Sills has Moon conjunct Saturn in Saj, Elizabeth Schwarzkopf, like Callas, has a Sagittarius Sun and Scorpio ascendant - the list goes on and on.  
Callas had a tremendous capacity for work (Node, Moon and Midheaven in Virgo, Venus in Capricorn aspecting Saturn, Mars conjunct Saturn). She later complained that Onassis did not understand her needs as an artist. He said, "Why work? I have plenty of money".  
She sublimated much of her sexuality into her work (Mars conjunct Saturn aspecting Venus in Capricorn); her husband was a much older man who managed her career. It is said that Onassis was one of the world's great lovers, and that he erotically awakened her.  
Scorpio rising and Venus in Capricorn explain her attraction to power - particularly Venus in Capricorn and Mars in Libra conjunct Saturn imply that she was working something out regarding her father through her relationships with older men.  
Towards the end of her career, as it became more and more apparent that her voice was failing, she could have retrained as a mezzo-soprano. There is much speculation as to why she chose not to. Perhaps the assaults from the press took their toll on her Virgo Moon, so vulnerable to criticism; too many attacks from the critics may have finally removed even the great Callas' will to overcome limitations.

I don't buy this chart for a minute... The other chart that gives her Scorpio Rising (instead of Sag. Rising) has got to be right-- hence, her famous temper, Diva leanings and facial structure (dueling cheek-bones with Jackie O, for one thing-- ALSO a Scorpio Rising.) The Scorpio Ascendant is a highly specialized horoscopic component-- and highly recognizable --physically and otherwise, if you understand what to look for. Also, while this chart gives her Virgo Moon, the other Callas-chart which I assert is correct instead gives her Libra Moon-- a component that is prone to rigid self-improvement efforts even to the point of neurosis (especially when mixed with a Sun or Ascendant in Scorpio.)

Strong Fire - Sun, ASc, Mercury and their sign's ruler Jupiter in Sagittarius with both the Sun and Mercury square Uranus (explosive - unpredictable outbursts). Mars Sesquiquadrate (135 degrees) Uranus ruler of the third house.

Venus - natural ruler of the second is in Capricorn and in mutual reception with Saturn (timing and discipline needed in singing) in Libra (Saturn is also co-ruler of her third). As I said in the above paragraph - Venus is square the Aries Point bringing that part of her chart into public view. Mercury in the first (angular) would indicate a "prominent" voice - a pronounced ability to communicate (in whatever form).

Mars conjunct Saturn usually indicates a very disciplined person. The Moon in Virgo - a concern about the body, nutrition, health.

1. Callas' temper may arise from the exact conjunction of Mars/Saturn in the eleventh. She did not cater well to restraints imposed by others, and blew up when told what to do. She also has the "royal star" Antares (rival of mars) conjunct her Asc and Sun.. According to Robson this red star imparts a headstrong, belligerent nature, as well as great energy. 2. The venus in Capricorn is in mutual reception with Saturn in Libra. This is a signature of the loyalty and wisdom (Saturn) an older partner can provide. 3. Venus is on the Aries point (O d cardinal sign) which can indicate fame for one's beauty or vocal talent. There was a Jupiter/Uranus conjunction in October 1954 . The conjunction transited her eighth house of transformation. This conjunction squared Neptune @ 25 Libra which conjoined her natal Mars/Saturn conjunction in the eleventh. These transits show that she may have suddenly dropped the weight because of some sort of operation?

I honestly believe her fiery Temper comes from that of not only her Greek/Italian heritage, but her mother. Her mother was extremely controlling, domineering and ambitious, and was even committed to an asylum one, for a short time. As a child, Maria's mother did not allow her to do anything else except than practice, practice, practice, without ever getting a chance to develop as a child by playing with dolls, or any other sort of toy. I can't think of any other reason, other than those of inheriting her mother's personality, and from the emotional abuse she suffered as a kid, that she was the way she was.

First of all, please bear with me. I am a rank amateur, so I could easily get something wrong.
Looking at the chart, I am immediately struck by the Grand Trine operating between Chiron, Neptune, and Sun-Ascendant. Specifically, it's the last three that interest me. I suspect this aspect may hold the key to her musical talent.
Sun trine Neptune also suggests the ability to fool people and get away with it... eh?
There's also a Mars-Venus sextile, which would seem (to me at least) suggestive of a coordination between the physical and artistic.
